I use a Hard Arkansas Stone or a 1200 grit Diamond wet stone.
- With a Magic marker ink both sides of the edge bevel.
- Make a light stroke on the stone and then look at the ink to make sure you're holding the knife at the proper angle.
- While pressing firmly, stroke the blade 2 or 3 times per side. * VERY IMPORTANT. Do not bring up a burr/wire edge. Stop just short of doing so. The edge will feel a little ruff. That's OK.
- Try running the blade through a piece of paper. If it snags, run it through some cardboard 2 or 3 times. If it stills snags a bit, run it through the cardboard a couple more times.
- We're not after hair popping sharp, we're after cutting sharp.
